Mexican wedding cakes are not essentially the cake that you have in mind. When we say wedding cakes, we automatically think about big wedding cakes for receptions with all the frills and icing.  They are called a number of things in different cultures, but one thing they have in common is that they can tickle the most discriminating taste buds.

So what is a Mexican wedding cookie? What it is not is an actual wedding cake but a cookie like dough, shortbread often given as favor in Mexican weddings. It was said to have originated in Spain wherein they were known as “Polvoron”, “Biscocho”, “Biscochitos” or “Polvorones” among a few things. Originally, they were shaped as diamonds not like today’s butterballs, and covered in white confectionery sugar to wish the newlywed a blessed marriage and pure beginnings.

So now that you’ve had your saliva drooling from the stories about these sweet treats, are you ready to take the challenge and make some of your own? The ingredients are pretty simple and the steps are even simpler. You will need:

  • 2 cups of white flour (all-purpose is good enough)
  • A dash of salt
  • Cut, unsalted butter about ½ cup and ½ cup bread shortening
  • ½ cup walnuts, pecan or almonds, finely chopped
  • 1 cup confectioner’s sugar
  • 1 egg

1.)    Preheat your oven to about 350 degrees.

2.)    In a food processor, chop and blend the nuts and sugar.

3.)    In a separate bowl, mix flour and salt while adding the butter and shortening little by little. Mix well using hands, until the concoction becomes crumbly.

4.)    Add sugar, nuts and egg to the mixture and knead some more.

5.)    Roll the dough into balls, place them on baking sheet, bake and wait for the yummy treat to come out well.
